Maintaining a significant amount of weight loss is HARD! 55 pound weight loss to be exact. I struggle everyday to make healthy decisions, sometimes I just end up giving into the craving. Hello chocolate chip cookie dough ice cream with extra caramel on the top! However on most days it’s easy for me to stay on track, by making a decision to live a healthier life. It’s a mental thing for me. Feel good on the inside, look good on the outside that’s kinda my motto.
What I Eat in A Day
Breakfast: I’m not an early morning eater. Although I wake up around 6:00 am everyday I prefer to eat breakfast around 10:00 am. I try to keep it pretty simple to be honest. Some days it’s just Lucky Charms or Special K, other days it’s a bit more fancy, depending on the mood I’m in. Today I was in the mood for some oatmeal. Now I’m not a big fan of oatmeal, but I eat it because weeeelllll its healthy. However plain oatmeal is pretty boring so I decided to jazz it up a bit with some vanilla yogurt, mango, and plums. Super simple and very tasty.
Lunch: Probably my favorite meal of the day and usually the largest meal of the day. I like to eat my biggest meal early on in the day (around 11:30) so that it has time to digest. Today I chose to do a light lunch instead. I love rice so I decided to do a Shrimp Stir Fry which consist of Zatarain’s dirty rice, shrimp, a little fried egg, some sautéed onions and bell pepper, and avocado on the side because avocado is life duh *lol.*
Dinner: Normally I’ll eat dinner around 6-6:30 pm. No later than 7:30 pm usually. For dinner I usually keep it simple a nice Caesar salad with salmon or chicken on the side and I’m good to go. Today I decided to do a Caesar salad with a twist. I added some mushrooms, jalapeños (for an extra kick), and onion and it was delicious!
Sometimes I switch it up with couscous, sautéed vegetables and either chicken or some sort of seafood on the side (usually salmon.) Every now and then I’ll have tilapia or shrimp just depends on what I have on hand at the time.
Snacks: I’m not a big snacker unless I’m extremely bored, then I usually gravitate towards candy. Don’t judge me, judge ya self.
I do my best to eat healthy overall, but I’m not perfect and I need something a little greasy every now and then. Maybe I’ll show you the non healthy version of what I eat in a day next time??
